Ingredients:
6 baby marrows
1 red onion finely chopped (can use spring onion)
1 clove garlic, grated
2 eggs, beaten
1/2 cup self-raising flour
1/4 cup fresh chopped mint
1/2 Bush Hill Cheese Feta, crumbled
Salt & ground black pepper to taste
Method:
1. In a bowl, combine the baby marrows, onion, garlic, eggs, flour, and fresh mint.
2. Season the mixture to taste and fold in the crumbled feta cheese.
3. Heat oil in a pan over medium heat.
4. Place tablespoons of the batter into the pan.
5. Cook for about 3 minutes on each side, until golden brown, and drain on paper towels.
