Ingredients:
1 cup cake flour
1/4 tsp mustard
3 tsp baking powder
1/2 tsp salt
1 cup of grated Bush Hill Cheese Aged Cheddar
125g chopped bacon
1 egg, beaten with ½ cup milk
1 tbsp melted butter
Chopped fresh herbs to taste
Method:
1. Sift together the cake flour, mustard, baking powder, and salt.
2. Mix in the cheese, bacon, and fresh herbs.
3. Make a well in centre, then add the beaten egg mixed with the milk and melted butter.
4. Stir just enough to combine the ingredients.
5. Spoon the batter into well-greased muffin pans, filling each cup halfway.
6. Bake at 200°C for 10-15 minutes, or until golden brown.
